Herb and Mustard Marinade
This marinade is great with Chicken, Beef or Lamb.
- 2-3 cloves Garlic
- 1 large handful Mint leaves
- 1 sprig Rosemary
- 2 tablespoons Wholegrain Mustard
- 1 tablespoon Honey
Wash herbs and pat dry. Peel garlic.
Blitz herbs in a food processor or chop finely by hand.
Add mustard and mix well to combine.
Add enough honey to make a paste at a consistency you like. Mix well.
Rub the marinade over the meat and allow to marinate for at least an hour. Cook meat according to weight. My rule of thumb is 1 hour/kg at 180oC.
You can change up the herbs and types of mustard used to suit your taste and the meat you are cooking.
