Herb and Mustard Marinade For Roasts


Herb and Mustard Marinade
This marinade is great with Chicken, Beef or Lamb.
  • 2-3 cloves Garlic
  • 1 large handful Mint leaves
  • 1 sprig Rosemary
  • 2 tablespoons Wholegrain Mustard
  • 1 tablespoon Honey
  1. Wash herbs and pat dry. Peel garlic.
  2. Blitz herbs in a food processor or chop finely by hand.
  3. Add mustard and mix well to combine.
  4. Add enough honey to make a paste at a consistency you like. Mix well.
  5. Rub the marinade over the meat and allow to marinate for at least an hour. Cook meat according to weight. My rule of thumb is 1 hour/kg at 180oC.

You can change up the herbs and types of mustard used to suit your taste and the meat you are cooking.
